Sat Bains

Sat Bains approached us while they were in the process of reworking their 2-star Michelin star restaurant, located in a unique oasis, just outside Nottingham City Centre. They wanted to create a more luxurious and exclusive offering for their guests by reducing the number of tables in the restaurant and showcasing their impressive wine collection at a dedicated sommelier station. 

We met with them to discuss their ideas and needs for the space, working through it holistically and listening to their hopes for the future of the restaurant. From there, we developed a design for a light oak sommelier station with floor to ceiling storage, a new bar area that drew inspiration from the existing Japanese influences in the restaurant, a welcome desk and curved oak partition that transformed a less popular table into one of the most sought after seats for diners.  

The bar and sommelier station have unique features, including hidden storage for ice buckets and bottle openers and empty storage units for used bottles, to make these spaces work hard functionally for the Sat Bains staff. Hiding these functional elements also allows the restaurant to inspire and invite its guests into a unique dining experience. By displaying the spirits collection on Japanese-inspired floating shelving units in the bar, beside a sunken ice bucket all beneath a minimalist bar light, we created an impactful welcome for Sat Bains’ guests, immediately immersing them in the luxury experience the team hoped for -  and all before walking round the corner to the Sommelier station.

Throughout the project, we collaborated with Sat Bains and his team, as well as their trusted trades. It was a pleasure and a privilege to work on this project, we thoroughly enjoyed the experience.
