Sat Bains

Overview

We were approached by Restaurant Sat Bains during the reworking of their two-Michelin-star restaurant, set just outside Nottingham city centre.

The brief was to create a more refined and exclusive dining experience by reducing the number of covers and introducing a dedicated sommelier station to showcase their wine collection.

Design Approach

Working closely with the client, we developed a series of interventions that enhance both the function and atmosphere of the space.

A new oak sommelier station forms a central feature, with floor-to-ceiling storage designed to display the wine collection with clarity and presence. Alongside this, a new bar area draws on subtle Japanese influences, creating a calm and understated arrival experience.

A curved oak partition redefines part of the dining area, transforming a previously underutilised table into a more intimate and sought-after seating position.

Detail & Function

Functionality was carefully integrated into each element of the design.

The bar and sommelier station incorporate concealed storage for service items, ensuring the spaces operate efficiently while maintaining a clean and refined appearance. Floating shelving introduces a light, architectural quality, allowing the display of bottles and glassware to become part of the experience.

Material choices and lighting were considered to create a sense of warmth and quiet luxury, supporting the overall atmosphere of the restaurant.

Collaboration & Delivery

The project was delivered in close collaboration with the Sat Bains team and their trusted contractors, ensuring each element was executed with precision and consistency.

Final Outcome

The completed interior enhances both the operational flow and the guest experience.

By refining key areas and introducing carefully considered interventions, the space now feels more intimate, immersive and aligned with the restaurant’s level of craftsmanship and attention to detail.
